That is actually a good question.

In my opinion, the game is hated because of two reasons;

Gatekeeping and plain out homophobia/bigotry

Gatekeeping because one side of the community doesn't see it as an AC game because we don't play as a proper Assassin and the other reason because we play as a woman that can romance other women and the sexual themes that are represented in the game which are part of the Ancient Greek culture.

In my case, my first playthrough was kind of meh, but the more I played it, the more I fell in love with it too until I ended up replaying the game at least 5 times and I have 500+ hours poured into the game.

Cool, I was curious because alot of people have actually been disliking Odyssey (minus Optimistic human or I think that's the name of the channel) on youtube.

No idea probably because it has no Assassin's in it apart from one Master lone Assassin Darius

I mostly don't like it for introducing a lot of lore elements that I thought were dumb. It also furthered the genericization of the franchise but to be fair that started with Origins. I am not even convinced it is that good a game taken outside of the Assassin's Creed context.

There's Evie, bayek and assassins if you have Ubisoft Connect but I think you left them out due to them only being skins of the ship crew.
