The Headless Horseman is one of the regulars of the Poison Apple who joins Prince Charming in his plan to take over Far Far Away.

Shrek 2
The Headless Horseman appears in the Poison Apple drinking a shot and burping out of his neck hole. He later appears to be given a sobriety test by some knights before Shrek and Donkey burst past him after hearing the Fairy Godmother’s plan.
Shrek the Third
The Horseman is seen once again drinking at the Poison Apple- this time from a skull mug. He soon joins Prince Charming's team of villains and helped him take over Far Far Away. When the villains are redeemed after Arthur's speech, he reveals he has always wanted to play the flute.
Thriller Night
The Headless Horseman appears as a zombie in Shrek's dream, and is briefly seen in one of the back rows at the movie theater in Far Far Away.
Shrek Comics
The Headless Horseman appears in one of the issues as the main antagonist. He's the leader of a group of monsters residing in the Serenity Forest, an area that was currently up for sale. It turns out that he and the others were evicted from their homes, leading them to let their anger out by scaring visitors of the forest. In the end however, Shrek and his friends are able to spread awareness of the forest and the land is bought out by friendly public figure, Dougal Frump.
Trivia
- He occasionally drinks from a skull cup.
- While all of the villains in Shrek the Third had established rivals that motivates them to reign terror, the Horseman didn't have anyone who particularly made him drown in sorrow. At the very least, his backstory with Ichabod Crane wasn't mentioned by Charming during his speech.
- While supposedly being undead, he is seen as a zombie in Thriller Night. Being a dream, this doesn't imply that the Horseman is not alive.
- Despite being a recurring character, he never appeared in the video games.
- In the Shrek comics, he has an outfit that is more faithful to his descriptions in "The Legend of Sleepy Hollow," as he's wearing a uniform worn by soldiers during the American Revolution.
- The outfits in the movies however vaguely resemble the outfit worn by the version seen in Tim Burton's Sleepy Hollow- portrayed by Christopher Walken.
- The Headless Horseman was supposed to appear as a main character in Scared Shrekless in Shrek's final story. This would've involved him going on a rampage in Sleepy Hollow and trying to murder Shrek. Him and the entire story were cut for unknown reasons.
