One does have to wonder a little about the best way to review cookbooks, really. I can tell you lots of things about it - that it's well-written. That it tells you about the history of sausages, and the equipment and techniques for sausage-making, and the health aspects of sausages, and is stuffed with tasty recipes for every kind of sausage I can think of and a few that I couldn't previously. And that it has interesting and entertaining sausage-making anecdotes here and there, too.
But most importantly, what I can tell you is that an amateur learning from it was able to make damn fine sausage first time out, and every subsequent time but one, too. And what more does a sausage book need?
Res ipsa loquitur.
