All articles in Beverages MDPI (ISSN: 2306-5710) Vol 10, Issue 3, are now freely available to access, read and download: https://brnw.ch/21wOZXU COVER STORY: Given the high sugar content of chocolate-flavored milk and the growing demand for healthier, reduced-sugar alternatives, this study from Aarhus University investigated how replacing sucrose with either synthetic (acesulfame-K) or natural (steviol glycoside) sweeteners in chocolate-flavored milk affected the sensory profile as well as consumer perception and liking. The results found that partial sucrose replacement preserved sensory qualities, while full replacement led to bitterness and off-flavors. A cluster analysis identified two segments: one favored the synthetic sweetener system, while the other preferred partial sucrose replacement, regardless of sweetener type. These findings emphasize the need for consumer segmentation in developing reduced-sugar products, with partial sucrose replacement showing promise in maintaining taste expectations. Does the way we meet our partner determine the quality of the relationship? A study published in the Open Access journal Social Sciences attempts to see if this is true by comparing the quality of relationships of couples who met through dating apps versus in real life. The study, cited in New York Post, finds that based on questionnaires given to 233 US college students, there was no significant difference in self-perceived relationship quality. Hence, the authors suggest that dating apps may not indicate relationship success, as the stigma of the apps may suggest.
